Vegan Fruit Pizza!

A while back, I posted about our “new way of eating”, we are dietary vegans now and we have never felt better!  I’ve been enjoying learning how to cook this way and I’m happy to say the food is just as good, if not better!  I’m a big fan of bold flavors and I my vision of a vegan was chewing on a stalk of celery– au contraire.  Being vegan isn’t flavorless and it’s not all about eating raw veggies—it’s so much more!

With that, I wanted to share a dessert recipe I tried the other day:

Vegan Fruit Pizza

2 cans of Pills.bury Croissants(ones w/out butter, of course.  I know this isn’t healthy, but I didn’t have time to bake a crust–It would be best if you could bake a sugar cookie crust!)
8oz of Non-Dairy Cream Cheese
1.5 Cups Sugar
Strawberries, Kiwi, Blueberries and Grapes
Bake the crust on a cookie sheet according to the can directions.  Mix sugar and non-dairy cream cheese with a whisk and cover cooled crust.  Arrange fruit on top….and

Voila!

Looks good, right?  It tasted just as good as it looked!

Quick Vegan Recipe

I wanted to share a delicious vegan recipe I tried recently. 

Chocolate cupcakes with strawberry frosting!  YUM!

The cupcakes were fluffy and moist.  The frosting was extremely difficult to work with because of the coconut oil, but it tasted great!

Delicious Homemade Nachos

I hope everyone is having a great weekend so far!  My husband and I took the day off yesterday, so today feels like Sunday—but it’s not!  Hooray!  We still have a full day of fun before we go back to work on Monday. 
While trying to decide what to do on this rainy Saturday, we had our minds fixed on some awesome nachos!  We decided to make them ourselves and they turned out great.  I wanted to share the recipe with you all!
Without further ado, I give to you….
Delicious Homemade Nachos!
You will need:
  1. Mexican Shredded Cheese
  2. Tortilla Chips(we like the “hint of lime” kind)
  3. Frozen, shredded chicken(fully cooked)
  4. Black Olives
  5. Rotel
  6. Sour Cream
  7. Adobo All Purpose Seasoning
  8. Oregano

Preheat oven to 350 degrees.  Spread chips evenly over cookie sheet.  Put a layer of shredded cheese over chips, add chicken, rotel, black olives, oregano and another layer of cheese. 
Bake in oven for 4-5 minutes, watch closely!  The cheese will burn. 
Remove once cheese is melted and chicken is warm, add sour cream and
 Enjoy!

Delicious and Healthy Smoothie!

I’m really big on eating organic foods and buying locally.  The local buying becomes difficult in the winter, but my trusty Trader Joe’s still provides me with a wide variety of organic foods!
I came up with this smoothie last week because I noticed the mangos at TJ’s were nice and ripe.  Plus, the last time I’d eaten a mango was when we were in Hawaii in August and I just knew the flavor would remind me of that glorious place! 
Okay, now to the smoothie!
1 Organic Mango(sliced and remove skin)
1 Organic Banana(sliced)
1 Cup of organic coconut milk
5 ice cubes
-Blend it all up together in your blender and ENJOY!
If you are using it as a meal replacement, you may want to add a dollop or two of organic unsweetened yogurt and if you are brave, an avocado.  You can’t really taste the avocado, but it turns the whole smoothie green and adds some nice monounsaturated fats to the drink that will fill you up. 

I worked on a great monogram door hanging last night(instead of a wreath), I’ll have the tutorial up as soon as I figure out how to hang it on my door! 🙂

DIY Table Placemats!

As a part of our living room/dining room makeover, which you can read about here, we got a new dining set and I was excited to pick out new placemats for the table!  Yes, I’m one of those people that keep the table set 24/7.  I just think it looks prettier that way 🙂  Much to my frustration though, I couldn’t find any fun, colorful and cute placemats.  They all seemed to be too formal for my liking.
So….I decided to make my own and I love the way they turned out!
I went to Michael’s and found this stencil set:

I fell in love with all the patterns and I thought of endless ways I could use these stencils for years to come!
Then I picked out some martha stewart paints.  I love her stuff because she has a great selection, beautiful colors and relatively cheap prices.  What more could you ask for?
I was originally going to use the stencil shown here but I changed my mind 🙂
 I bought 4 plain white placemats from bed, bath and beyond for $3/each.  And went to town!
Ta-Da!
 
I love how they turned out and I plan to stamp some napkins to match them!  It was seriously one of the easiest projects I’ve done.

Home-Made Caramel Corn

I recently tried this great recipe for homemade caramel corn and it was a huge hit!  I like it because I was able to substitute some of the bad ingredients for healthier(i’m not claiming this is good for you! ha!) ingredients.  I love doing that 🙂
So here it is:
You will need:
popcorn popper
organic popping corn
coconut oil
butter
turbinado(or any raw sugar)
maple syrup
sea salt
vanilla extract 
It’s really easy to make, here goes!
Preheat oven to 300 degrees

Melt 1/4 cup of butter, 1/2 cup of sugar, 1/4 cup maple syrup, 1/2 tsp vanilla and a pinch of salt in a saucepan over medium-low heat.  Stir often.
While the caramel is melting, put 1/4 cup of popping corn kernels(this makes enough for 4 people, it’s a pretty sweet snack.) and 2 tbsp of coconut oil.  Plug in popper and pop as usual.

After the corn has popped, place in large bowl

Pour the melted caramel over the popcorn 

Mix well, until all the caramel is covering the kernels 

Pour the caramel popcorn on a lightly greased baking sheet.

Spread the popcorn for even cooking, place in oven for 10 minutes
  
After 10 minutes, remove the popcorn from oven, place in bowl and…

ENJOY!
Like I said, this is a pretty sweet snack, Scott and I could only eat half of the batch.  You can store it in an airtight container.  I know this isn’t exactly a healthy snack, but if you’re going to eat caramel corn, it may as well be home-made!  I will gladly spend extra time baking and cooking in order to forego the HFCS and other yucky stuff that comes with store-bought snacks!

Plenty to be Thankful for: Recipes!

My favorite fall/ thanksgiving recipe is Marbled Pumpkin Cheesecake!  It’s the perfect blend of pumpkin and cheesecake and I could eat the whole thing!  So delicious!

We are here relaxing in Corolla, NC.  So far, so good.  I have 2 eclair pies cooling in the fridge and I cannot wait to indulge in those tomorrow night!
The eclair pie recipe is so, so easy.  I’ll write it out real quick:
Package of graham crackers2 french vanilla instant pudding powder mixestub of cool whip1 container of chocolate frosting
Mix the 2 pudding boxes with milk as directed on the box.  Add the tub of cool whip to the pudding.  Take a large rectangle 9 x 12 glass dish and put 1 layer of graham crackers in the bottom, so it covers the whole dish.   Pour half of the pudding mixture over the graham crackers and level with a spatula.  Put another layer of graham crackers over the pudding.  Pour the rest of the pudding mixture over the graham crackers.  Then put one last layer of graham crackers over the pudding.  So you should have graham crackers, pudding, graham crackers pudding, graham crackers…then melt the container of frosting on the stove so it thins out.  Pour the warmed chocolate pudding over the top of the pie(should be directly over your last set of graham crackers), spread the pudding in all the cracks.Refrigerate over night to allow the graham crackers to soften. 
Dig in!  It’s one of the easiest, but most delicious recipes ever!
